PAN FRIED ASIAN SCALLOPS

Serves 4.

Ingredients:

½ teaspoon sunflower oil
1 finely diced red chilli.
2 scallions / spring onions – sliced lengthways
8 scallops
2 tablespoons soy sauce.
½ tablespoon runny honey.
Zest and juice of 1 lime or lemon.

Method:

Mix chilli, honey, soy sauce and lime zest and juice in a bowl. Whisk well until all the ingredients are combined.

Heat the oil in a frying pan and quickly fry the spring onions, without colour. Remove and add the scallops. Fry for 1 minute on each side.

Add soy mixture to the pan and allow to reduce, until it thickens slightly.

Remove scallops from the pan, put on plate and drizzle a little of the sauce around them. Serve with salad leaves or noodles.
