PAN FRIED SCALLOPS WITH CHILLI

Pan fried Scallops with chilli, ginger and soy dressing. Serves 2 as a starter.

Preparation time 2-4 mins.Cooking time 4-5 mins.

Ingredients:

6 scallops
2 tablespoons light soy sauce
½ red chilli – diced fine
1 small piece fresh ginger – grated or finely diced.
Olive oil for frying

Method:

Heat oil in a non stick frying pan.

Add scallops and fry over a medium heat for 2 minutes on each side.

As they are cooking mix soy sauce, chilli and ginger in a bowl, and then add to the frying pan for the last 30 seconds of cooking.

Remove scallops from the pan and serve drizzled with the soy dressing.
