THAI SPICED CRAB CAKES

Serves 4. Preparation time 10 mins. Cooking time 6-8 mins.

Ingredients:

450g crabmeat
2 chopped spring onions or small bunch chives
100ml mayonnaise
150g breadcrumbs
1 egg
1 tablespoon of chopped parsley or coriander
1 finely diced red chilli
Zest and juice of half a lime
Salt and pepper
A little oil for frying.

Method:

Mix all the ingredients in a bowl and divide the mixture into 8 crab cakes.

If cakes are very moist dip them into more dry breadcrumbs and coat well.

Heat oil in a frying pan and fry over a medium heat for 4 minutes on each side until golden brown.

Serve with sweet chilli dipping sauce.
